Carafa I / II / III (Dehusked) a.k.a. Carafa
Color and depth without the burnt edge.
What it tastes like
Carafa is Weyermann's series of dehusked black malts. By removing the husks before roasting, much of the sharp burnt-bitterness is eliminated, leaving smoother coffee-and-cocoa depth. Used in schwarzbier, dunkel, and any beer wanting deep color without harshness. Carafa I is lighter, Carafa III is darkest.
