Why DIPA ages this way
Higher alcohol content (8-12% ABV) and elevated bitterness give Double IPAs slight protection against oxidation, but the absurd hop loads — often 3-5 lbs per barrel — mean there's vastly more aroma to lose. The first 30 days are peak. After that, the alcohol heat starts to dominate as hop aromatics fade. Eventually Double IPAs taste like sweet, syrupy boozy fruit punch.
How to store DIPA
Refrigerate. The high ABV doesn't save you — it actually makes oxidized flavors more pronounced. Drink standing up at the brewery if possible.
When to drink it
Within 30 days. After 75 days expect significant character loss. The Alchemist's Heady Topper instructions are blunt: 'Drink from the can. Drink fresh.'
