What it tastes like

Ella is a versatile Australian dual-purpose hop bred by Hop Products Australia and related to Galaxy. Used in small amounts it gives soft, noble-style floral and spice notes; pushed harder or in the dry hop it delivers grapefruit and tropical fruit. That dual personality makes it at home in everything from pilsners to pale ales and IPAs.

Tasting Tip
Dose light early for clean noble-style floral spice; save a heavier charge for late/dry-hop additions to pull out the grapefruit and tropical fruit.

History

Ella is bred by Hop Products Australia (HPA) and is described as the 'little sister' of the flagship Galaxy variety. It was trialled under the working name Stella and commercially released in 2011. Although prized for its dual low-dose noble / high-dose tropical character, it carries relatively high alpha acids, making it a true dual-purpose hop rather than a pure aroma variety.

Freshness Note
High caryophyllene and humulene give a spicy/herbal backbone; store cold and sealed to protect the more volatile floral and tropical aromatics.
